A sure thing on the day

Five things hosts worry about, and what I do about each.

  • Kept hot, kept safe

Never below 60°C, the food-safety line, from my pit to your plate.

  • Enough for everyone

Pick a plate size, in grams, and I cook to it.

  • Something mild for everyone

The chicken is lightly smoked. Sauces come on the side.

Questions hosts ask

What's in the price?

I cook it on my own pit, serve for 2 hours, and bring plates and cutlery.

How much food per person?

You pick the plate: 180, 250 or 330 g of cooked meat a head.

What about guests who don't love smoke?

The chicken is lightly smoked, no side is smoked, and sauces come on the side.

Can I share the price with my committee?

Yes. Share the estimate: the link holds the picks and the price, nothing about you.

Is there a minimum?

Smaller events start at $1,500. The estimate shows it when it applies.

How far ahead should I book?

Most people book 4–6 weeks out. Shorter notice? Ask, and I'll tell you straight if the date's free.

Got a rough idea? That's enough.

No name needed. “Not sure yet” is a fine answer.
